Roasted Tomato Sauce

Serves 8-10 people

Ingredients

  • 5 Roma tomatoes

  • 2 ½ cups cherry tomatoes

  • 1 large yellow onion

  • 2 bell peppers

  • 6-8 cloves of garlic

  • Olive oil

  • Salt

  • Pepper

  • Parsley 

Preparation

  1. Preheat oven to 400 F degrees.

  2. Wash all vegetables. Quarter Roma tomatoes, onion, and bell peppers.

  3. Place tomatoes, onions, bell peppers, and garlic on a large sheet pan. Drizzle with olive oil and sprinkle with salt, pepper, and parsley.

  4. Roast vegetables in oven for 30 min, flipping vegetables 2-3 times while cooking. Remove vegetables from oven and let cool for 15 minutes. 

  5. Add roasted vegetables to blender and blend until smooth. 

Tips

Serve with pasta, warm bread, or use as a pizza sauce
