Brown Sugar Cornbread Cookies

Ingredients:
1 stick unsalted butter, melted
½ cup packed brown sugar
1 tbsp vanilla extract
1 tsp cinnamon
1 large egg
1 egg yolk
2 pkg cornbread mix (8.5 oz pkgs)
½ cup all purpose flour
Directions:
Preheat oven to 325 degrees. For perfect, non stick cookies, line your cookie sheets with parchment paper.
Melt butter, and let cook for 10-15 minutes.
Using a stand mixer (or medium bowl with hand mixer), cream together melted butter and brown sugar. Mix on medium speed for 1-2 minutes.
Add egg, egg yolk, vanilla, and cinnamon into butter and sugar mixture. Mix on medium-high for 3-5 minutes, until creamy.
Slowly add in cornbread mix and flour and mix until combined.
Scoop cookies into ¼ cup sized ball and place on cookie sheets. There should be 2 inches of space between each cookie dough ball, as cookies with spread out.
Bake for 16-18 minutes. Let cookies cool on a cooling rack. Enjoy!
Tip: For an extra crunch, sprinkle brown sugar on top of cookie dough before baking!
