No Soak Pinto Beans (instapot)

Ingredients:

1 cup dried pinto beans

3 cups low sodium vegetable broth

1 onion, chopped

1 Jalapeno pepper, seeded and chopped

1 TBSP minced garlic

Directions:

Rinse and sort dried pinto beans. Put pinto beans, vegetable broth, onions, jalapeño, and garlic into instapot. Using the “manual” setting, cook beans for 45 minutes. Let the pressure, naturally release for 15 minutes. Refrigerate any leftovers for up to 5 days. Enjoy!
