Watermelon Feta Salad

Ingredients
- 4 cups seedless watermelon, cubed
- 1 cup feta cheese, crumbled
- 1/4 cup fresh mint leaves, chopped
- 1/4 cup fresh basil leaves, chopped
- 1 small red onion, thinly sliced
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
- Optional: 1/4 cup toasted pine nuts or pumpkin seeds
Instructions
1. Prepare the Ingredients:
1. Cube the watermelon into bite-sized pieces and place them in a large salad bowl.
2. Thinly slice the red onion.
3. Crumble the feta cheese.
4. Chop the mint and basil leaves.
2. Combine the Salad:
1. Add the crumbled feta cheese, chopped mint, chopped basil, and sliced red onion to the bowl with the watermelon cubes.
2. Toss gently to combine.
3. Dress the Salad:
1. In a small bowl, whisk together the olive oil and balsamic vinegar until well combined.
2. Drizzle the dressing over the salad.
3. Season with salt and pepper to taste.
4. Optional: Add Nuts/Seeds:
1. If using, sprinkle toasted pine nuts or pumpkin seeds over the salad for extra crunch and flavor.
5. Serve:
- Serve the watermelon feta salad immediately, or chill it in the refrigerator for up to an hour before serving for a refreshing and flavorful dish.
