Homemade Spaghetti, Oh Yum!

This elevated homemade version of the childhood favorite, is sure to please the kids and adults in your family, alike! Adding in some vegetables and protein helps balance out this dish as a meal, while still providing the comfort a hot bowl of pasta can bring.
Ingredients:
1lb box of ditalini pasta
8 oz of cottage cheese, blended
Roasted tomato sauce
Extra virgin olive oil
Fresh cracked black pepper
Directions:
Cook pasta according to package. Drain, but set aside 1 cup of pasta water.
Blend cottage cheese to a smooth consistency.
In a large sauce pan, add roasted tomato sauce and blended cottage cheese. Stir until combined.
Add cooked pasta to sauce and stir. Slowly add pasta water to consistency you like ( I typically add ¼-⅓ cup to keep the sauce thicker)
Cook until the sauce is heated completely through.
Plate pasta and garnish with a drizzle of olive oil and some freshly cracked black pepper.
